The iconic Aji Chombo (Scotch Bonnet) pepper was brought into widespread use by Antillean communities who settled along the Atlantic coast, bringing with them bold Caribbean culinary traditions. The vinegar-forward sauces they created became known as Aji Chombo or Chombo Picante — and today you’ll find them on tables across the country.
